Les évêques s'installent à Viviers entre le IIIe et le Ve siècles pour se protéger des agressions des envahisseurs barbares. Plusieurs cathédrales sont successivement construites sur le même site. Résidence des évêques depuis le Ve siècle, le bourg devint alors une puissante cité épiscopale aux privilèges confirmés par Lothaire et Charles le Chauve au IXe siècle. D'abord rattaché au royaume de Provence, la ville fait partie du Saint-Empire romain germanique après la mort de Rodolphe III, en 1032, jusqu'en 1308. L'évêque, vrai maître du pays avec l'archevêque de Lyon, lutta pour l'indépendance du Vivarais jusqu'à l'annexion de Lyon par Philippe le Bel au XIVe siècle. Le sud du pays, avec Viviers, reconnut alors la suzeraineté du roi de France et les évêques prirent, au XVe siècle, le titre de comtes de Viviers, princes de Donzère et de Châteauneuf-du-Rhône.
